The tuna is cooked in water and salt, and not steam, in order to keep its organoleptic qualities intact and not to disperse most of the proteins. After cooking, the product is cooled and manually we proceed to a meticulous peeling and to the elimination of the bones. The clean slices are thus cut into fillets and placed inside glass jars.
The product is part of the SANI project , as it contains important levels of the following group of nutraceuticals:
Omega-3 and Omega-6: these are polyunsaturated fatty acids called "essential" because, given the inability of our body to synthesize / produce them on our own, they must be introduced with the diet. The best food sources of omega-3 are the fish of the cold seas, deep waters, such as sardines, herring, mackerel ("blue fish"), to which are added salmon, cod and tuna; but also oil and flax and hemp seeds. The characteristic smell of fish comes from them. Finally, seed oils, dried fruits and legumes are good sources of omega-6. Omega-3 and omega-6 must be taken in the right proportions: 5: 1/6: 1; so they can fight stress, protect the heart and skin and keep blood pressure under control.
